【摘要】:Describesamethodforidentifyingandselectingdescriptorswhichcanthenbeusedfordrawingupthesensoryprofileofaproduct.Describesthedifferentstagesintheprocessforsettinguptestthroughwhichacompletedescriptionofthesensoryattributesofaproductcanbeobtained:fromaqualitativepointofviewbydefiningbymeansofdescriptorsalltheperceptionsfordistinguishingoneproductfromothersofthesametype;fromaquantitativepointofview,byevaluatingtheintensityofeachdescriptor.Thismethodcanbeusedtodefineaproductionstandard;toimproveordevelopproducts;tostudytheinfluenceoftheageingofproductsandalsooftheconditionsofstorageandpreservation;tocompareaproductwiththoseofthesametypealreadyonthemarket.
